  • 2 cups apple cider
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsalted butter, softened
  • 6 oz cream cheese, cold
  • 2 egg yolks, at room temperature
  • 3 tbsp granulated white sugar
  • 3/4 cup light brown sugar, packed
  • 2 tsp vanilla
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup granulated white sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Prepare apple cider reduction by simmering 2 cups of apple cider until it thickens to about 1/4 cup. Cool.
  2. For the cheesecake filling, beat cold cream cheese with sugar until smooth, then mix in egg yolks, vanilla, and cooled apple cider reduction.
  3. In another bowl, cream softened butter with sugars until fluffy. Add egg yolks and vanilla.
  4. Combine dry ingredients: flour, spices, baking powder, baking soda, and salt. Gradually mix into the wet ingredients.
  5. Preheat the oven to 350°F (175°C). Shape cookie dough around cheesecake filling and place on lined baking sheets.
  6. Bake for about 11 minutes or until edges are lightly golden.
