  • 2 teaspoons vanilla extract
  • 1½ cups peeled, diced tart apple (such as Granny Smith)
  • Optional: ¼ cup chopped pecans or walnuts
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)
  • Extra powdered sugar for dusting

Instructions

  1. Prepare the apples by peeling, coring, and dicing them into small chunks.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix eggs with granulated sugar and brown sugar until smooth. Add buttermilk (or milk with vinegar), melted butter, and vanilla extract.
  4. Combine wet ingredients into dry ingredients gently until just mixed.
  5. Fold in diced apples and optional chopped nuts.
  6. Preheat waffle iron and grease lightly.
  7. Spoon ¼ cup batter onto waffle iron for each donut; cook until golden brown (about 3–5 minutes).
