  • 4 lamb shanks
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 6 garlic cloves, smashed
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 2 cups apple vinegar
  • 2 cups beef stock
  • 4 sprigs fresh thyme
  • 2 sprigs rosemary

Instructions

  1. Season lamb shanks with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and sear the lamb on all sides until browned. Remove from pot.
  2. In the same pot, sauté sliced onion, smashed garlic cloves, chopped carrots, and celery for about 5-7 minutes until softened. Stir in tomato paste and cook for an additional 2 minutes.
  3. Deglaze the pot with apple vinegar, scraping up browned bits.
  4. Return lamb shanks to the pot, add beef stock, thyme, and rosemary; bring to a simmer.
  5. Cover and transfer to a preheated oven at 325°F (160°C). Cook for 2-3 hours or until tender.
  6. Let rest briefly before serving.
