  • 1 lb linguini noodles
  • 2 ripe avocados
  • 2 egg yolks
  • 2 large kale leaves
  • 34 cloves garlic
  • ¼ cup extra virgin olive oil
  • 1 ½ tablespoons lemon juice
  • 1 teaspoon kosher salt
  • ½ teaspoon paprika
  • Pinch of cayenne
  • 1 cup reserved pasta water
  • 45 slices turkey bacon, crumbled (optional)
  • ⅓ cup shredded Parmesan cheese (optional)

Instructions

  1. Boil the linguini noodles in salted water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a blender or food processor, combine avocados, egg yolks, kale leaves, garlic, olive oil, lemon juice, salt, paprika, and cayenne. Blend until smooth.
  3. With the blender running on low speed, gradually add reserved hot pasta water until you reach a creamy consistency.
  4. Toss the cooked linguini with the avocado sauce thoroughly. Stir in crumbled turkey bacon and Parmesan cheese if desired.
  5. Serve immediately with optional toppings like fresh avocado slices or lemon wedges.
