  • 2 lbs boneless chicken thighs or breasts
  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 3 tbsp lemon juice + zest
  • 2 cloves garlic (crushed)
  • 2 tbsp za’atar seasoning
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. Preheat your oven to 375°F.
  2. In a bowl, whisk together Greek yogurt, olive oil, lemon juice and zest, garlic, za’atar seasoning, salt, and pepper until well combined.
  3. Place chicken in a gallon-size plastic bag or container and pour marinade over it. Seal and refrigerate for at least 30 minutes or overnight.
  4. Coat a baking dish with cooking spray or olive oil. Remove excess marinade from chicken and arrange pieces in the dish.
  5. Bake uncovered for about 45 minutes or until golden brown and the internal temperature reaches 165°F.
  6. Garnish with chopped parsley before serving.
