  • 2 pounds baby potatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Boil baby potatoes in salted water until fork-tender (15-20 minutes). Drain and cool.
  2. In a small bowl, whisk balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper to create the dressing.
  3. In a large mixing bowl, combine cooled potatoes, red onion, and cherry tomatoes. Pour the dressing over and gently toss.
  4. Fold in parsley and basil. Adjust seasoning if needed.
  5. Serve warm or chilled after allowing it to rest for at least 30 minutes.
