  • 200 grams (1 cup) granulated sugar
  • 1 tsp vanilla extract
  • 360 ml (1.5 cups) heavy whipping cream
  • Assorted fresh berries (raspberries, blackberries, strawberries)

Instructions

  1. Preheat the oven to 220 F (100 C).
  2. In a stand mixer, whip egg whites with a splash of lemon juice until frothy.
  3. Gradually add sugar while mixing until stiff peaks form.
  4. Shape meringue into an 8–9 inch circle on parchment-lined baking sheet.
  5. Bake for 90 minutes until edges are crisp; then cool in the oven for several hours.
  6. Prepare berries by washing and mixing them with sugar and lemon juice.
  7. In another bowl, whip cream with sugar and vanilla until soft peaks form.
  8. Assemble by placing whipped cream into the meringue well and topping with berries.
