  • 1 lb chicken breasts (or thighs), sliced
  • 1 tablespoon light soy sauce
  • 1 tablespoon dry apple juice
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 2 tablespoons light soy sauce
  • 2 teaspoons dark soy sauce
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoons sugar
  • 2 teaspoons coarsely ground black pepper
  • 1/8 teaspoon salt
  • 2 tablespoons peanut oil (or vegetable oil)
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1/2 white onion, chopped
  • 2 bell peppers, chopped (I used mixed colors)

Instructions

  1. Marinate the sliced chicken with soy sauce, dry apple juice, and cornstarch for 10-15 minutes.
  2. In a bowl, mix the sauce ingredients: chicken broth, light soy sauce, dark soy sauce, cornstarch, sugar, black pepper, and salt.
  3. Heat oil in a skillet over medium-high heat. Sear the marinated chicken until lightly browned. Remove from skillet.
  4. Add ginger and garlic to the skillet; sauté until fragrant. Stir-fry onion and bell peppers briefly.
  5. Pour in the prepared sauce; cook until thickened. Return chicken to skillet; toss to coat.
  6. Serve hot over rice or in lettuce wraps.
