Ingredients

Scale
  • 1 stick unsalted butter
  • 3 large ripe bananas, mashed
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 cup dark brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon ground nutmeg
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 350°F. Grease an 8.5-by-4.5-inch loaf pan with nonstick cooking spray.
  2. In a light-colored sauté pan, melt the butter over medium heat until golden brown and aromatic, then let it cool slightly.
  3. In a medium bowl, mix the mashed bananas with the eggs until well combined.
  4. In another bowl, whisk together the flour, dark brown sugar, baking powder, cinnamon, salt, and nutmeg.
  5. Combine the banana mixture with the dry ingredients; gently stir in the melted brown butter until just mixed.
  6. Pour the batter into the prepared loaf pan. Optionally, place two halved bananas cut-side up on top and sprinkle with additional dark brown sugar.
  7. Bake for 70 to 80 minutes or until a toothpick inserted in the center comes out clean.
