  • 1 large egg
  • 2 teaspoons cocoa powder
  • 2 teaspoons monkfruit sweetener (optional)
  • Pinch of salt
  • 1 1/2 tablespoons sugar-free semi-sweet chocolate chips (divided)
  • 12 teaspoons water as needed

Instructions

  1. In a mixing bowl, combine the peanut butter, egg, cocoa powder, salt, monkfruit sweetener (if using), and 1 tablespoon of chocolate chips. Mix well.
  2. If needed, add water gradually until the batter reaches a smooth consistency.
  3. Preheat your mini waffle maker according to the manufacturer’s instructions.
  4. Pour half of the batter into the preheated waffle maker and sprinkle half of the remaining chocolate chips on top.
  5. Close the lid and cook for 2-3 minutes or until no steam is emitted.
  6. Carefully remove the waffle with a spatula and repeat with the remaining batter.
