  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Cajun seasoning, salt, and pepper to taste

Instructions

  1. Cook rotini in a large pot of salted boiling water until al dente (9-10 minutes). Reserve 1 cup pasta water before draining.
  2. Season chicken pieces with Cajun seasoning, salt, and pepper.
  3. In a skillet over medium-high heat, heat olive oil and 1 tbsp butter. Sear chicken for 7-8 minutes until golden brown; stir in half the garlic during the last minute. Remove from skillet.
  4. In the same skillet, add remaining butter and garlic; sauté for about 30 seconds.
  5. Stir in heavy cream and let simmer for 2-3 minutes.
  6. Add mozzarella and Parmesan cheeses; mix until melted into the sauce.
  7. Season sauce with Italian seasoning, crushed red pepper flakes (if desired), salt, and pepper.
  8. Toss cooked rotini in the skillet until coated in sauce; add reserved pasta water if needed.
  9. Serve hot with chicken on top or mixed in; garnish with fresh parsley.
