  • 1 tbsp Cajun seasoning
  • 12 oz twisted pasta (like rotini or fusilli)
  • 4 cloves garlic
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 2 oz cream cheese

Instructions

  1. Bring a large pot of salted water to boil and cook the twisted pasta until al dente. Drain, saving half a cup of pasta water.
  2. Season sliced chicken with Cajun seasoning, garlic powder, salt, and pepper. In a skillet over medium-high heat, heat olive oil and cook the chicken until golden brown (5-6 minutes). Transfer to a plate.
  3. In the same skillet, melt butter and sauté minced garlic for about 1 minute. Add chicken broth and heavy cream, scraping any browned bits from the skillet.
  4. Lower heat and gradually stir in cream cheese, mozzarella, and Parmesan until melted into a smooth sauce. Adjust thickness with reserved pasta water if needed.
  5. Return cooked chicken and drained pasta to the skillet. Toss everything together until well-coated in sauce. Simmer for about 2 minutes.
  6. Serve hot garnished with chopped parsley or extra mozzarella.
