  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 cup heavy cream
  • ½ cup low-sodium chicken broth
  • 1 cup Velveeta cheese
  • ½ cup shredded mozzarella cheese (for sauce)
  • ½ cup shredded mozzarella cheese (for melting over chicken)
  • ¼ cup grated Parmesan cheese
  • 2 oz cream cheese
  • 1 tsp Italian seasoning
  • Chopped parsley or dried herbs, for garnish

Instructions

  1. Boil rotini in salted water until al dente; reserve ½ cup pasta water and drain.
  2. Season chicken with Cajun seasoning, smoked paprika, salt, and pepper.
  3. Heat olive oil and 2 tablespoons of butter in a skillet; sear chicken for 6-8 minutes until golden-brown.
  4. Add half the garlic during the last minute; top with mozzarella to melt.
  5. In the same skillet, melt remaining butter and sauté the rest of the garlic.
  6. Stir in heavy cream and chicken broth; simmer before adding cream cheese until smooth.
  7. Mix in Velveeta, remaining mozzarella, and Parmesan until melted; season with Italian seasoning.
  8. Toss rotini with the sauce; adjust thickness with reserved pasta water if needed.
  9. Serve plated with cheesy garlic chicken on the side; garnish as desired.
