  • ½ cup light brown sugar (100 g)
  • ½ cup granulated sugar (100 g)
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • ¼ cup pumpkin puree
  • 1 ½ cups all-purpose flour (188 g)
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Brown the butter in a saucepan over medium-high heat until it turns amber brown; let cool.
  3. In a bowl, whisk together flour, baking soda, salt, cinnamon, ginger, allspice, nutmeg, and clove.
  4. In another bowl, mix the cooled brown butter with sugars, egg white, vanilla extract, and pumpkin puree until smooth.
  5. Gradually add the dry ingredients into the wet mixture; stir until just combined.
  6. Gently fold in the chocolate chips.
  7. Scoop dough onto prepared sheets, spacing them about 2 inches apart.
