  • 6 strips turkey bacon
  • 1 lb boneless skinless chicken breast
  • 2 tbsp olive oil
  • 1 small yellow onion
  • ¾ cup carrots
  • 2 ribs celery
  • 3 cloves garlic
  • 5 cups chicken broth
  • 1 cup half and half
  • lbs Yukon gold potatoes
  • 1½ cups cheddar cheese

Instructions

  1. Cook turkey bacon in a large pot over low heat until crispy. Reserve drippings.
  2. Sear seasoned chicken in olive oil until golden brown; set aside.
  3. Sauté diced onion, carrots, and celery in reserved drippings until softened.
  4. Add minced garlic and seasonings; stir well.
  5. Sprinkle flour into the pot; cook for 2 minutes.
  6. Gradually stir in warm chicken broth and half and half.
  7. Add diced potatoes and return seared chicken to the pot; simmer until potatoes are tender.
  8. Stir in shredded cheese before serving hot, garnished with green onions.
