  • 8 tortillas (corn or flour)
  • 1/3 cup Greek yogurt
  • Fresh cilantro
  • Lime juice
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper (to taste)
  • 1 sweet red bell pepper (diced)
  • 1/4 cup red onion (diced)
  • 3 green onions (diced)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Sriracha
  • 1/2 bunch fresh cilantro (chopped)
  • Crumbled Cotija cheese (optional)

Instructions

  1. In a mixing bowl, combine olive oil, smoked paprika, chili powder, salt, pepper, and lime juice. Coat chicken breasts with the marinade.
  2. Heat a skillet over medium heat, then cook the marinated chicken for about 5 minutes per side until fully cooked. Remove from heat and let rest before slicing.
  3. For peach salsa, mix diced peaches, red bell pepper, red onion, green onions, cilantro, lime juice, chili powder, salt, and pepper in another bowl.
  4. In a separate bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, Sriracha, lime juice, and chopped cilantro for the crema.
  5. Warm tortillas briefly in a skillet; fill each with sliced chicken topped with peach salsa and drizzle with crema.
