  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the cinnamon sugar filling by mixing brown sugar, softened butter, and cinnamon until smooth.
  3. In a large bowl, combine all dry ingredients: all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. In a stand mixer, cream together cubed cold butter and granulated sugar until smooth.
  5. Add eggs and vanilla extract to the butter mixture; blend until fully combined.
  6. Gradually mix in the dry ingredients until just incorporated.
  7. Shape the dough into a rectangle on a clean surface and evenly spread the cinnamon sugar filling over it.
  8. Roll the dough into a log shape, cut into 10-12 pieces, and place on a parchment-lined baking sheet.
  9. Bake for 9-11 minutes or until edges are lightly golden brown.
  10. Allow cookies to cool before frosting them with cream cheese icing.
