  • 1 large onion
  • 3 cloves garlic (plus extra for naan)
  • 1 tbsp fresh ginger
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 can chickpeas
  • 1 can coconut milk
  • 1 cup beef broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ cup plain yogurt

Instructions

  1. Prepare all ingredients by chopping the onion, mincing the garlic, and cutting the beef into bite-sized pieces.
  2. In a large pot over medium heat, heat vegetable oil. Sauté chopped onion until translucent, then add minced garlic and grated ginger; cook until fragrant.
  3. Add beef stew meat and brown on all sides for about 5-7 minutes.
  4. Stir in curry powder, ground cumin, and optional chili flakes. Mix well.
  5. Pour in coconut milk, beef broth, and tomato paste; season with salt and pepper.
  6. Bring to a gentle boil then reduce heat to low. Cover and simmer for 45 minutes to an hour until beef is tender.
  7. For the garlic naan: Combine flour, salt, baking powder, yogurt, and minced garlic in a mixing bowl. Knead until soft dough forms; let rest for 30 minutes. Roll out into circles and cook on a hot skillet until golden brown.
