  • 2 tbsp vegetable oil
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tbsp red curry paste
  • 13.5 oz can coconut milk
  • ½ cup beef broth
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp ground cumin
  • ½ tsp turmeric
  • ½ tsp chili flakes (optional)

Instructions

  1. Thinly slice the beef against the grain and prepare the aromatics by mincing garlic and grating ginger.
  2. Heat vegetable oil in a heavy-bottomed skillet over medium-high heat. Cook sliced beef until browned, then set aside.
  3. In the same skillet, sauté sliced onion until soft, then add garlic and ginger, cooking until fragrant.
  4. Stir in red curry paste, cumin, turmeric, and optional chili flakes for about one minute.
  5. Combine coconut milk and beef broth, bring to a simmer.
  6. Add cooked beef back to the skillet with soy sauce and brown sugar; let simmer for 5–10 minutes until thickened.
  7. Serve hot over jasmine rice with garlic naan.
