  • 2 lbs beef cubes (chuck or stew meat)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 can (14 oz) coconut milk
  • Broth (enough to cover the beef)

Instructions

  1. Season the beef cubes generously with salt and pepper. Heat vegetable oil in a large pot over medium-high heat and sear the beef until browned on all sides. Remove from the pot.
  2. In the same pot, sauté the chopped onion until translucent. Add garlic and ginger, cooking until fragrant.
  3. Stir in curry powder, cumin, and coriander; cook for another minute.
  4. Return the beef to the pot, pour in coconut milk and enough broth to cover the meat. Bring to a gentle simmer, then reduce heat to low and cover. Cook for about 1 hour until beef is tender.
  5. While simmering, prepare fries according to package instructions and cook rice as directed until fluffy.
  6. Adjust seasoning before serving; plate with fries and rice.
