  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1 can (13.5 oz) coconut milk

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté the onion until translucent, then add garlic and ginger; cook until fragrant.
  2. Stir in red curry paste, turmeric, cinnamon, cumin, and optional chili powder. Mix well before adding the beef cubes; brown on all sides.
  3. Pour in coconut milk until the beef is fully covered. Bring to a gentle simmer, reduce heat to low, cover the pot and let it cook for 1.5 to 2 hours until the beef is tender.
