  • 1 lb boneless, skinless chicken breasts
  • 9 oz cheese tortellini
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions in boiling salted water. Reserve some pasta water, drain, and set aside.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. In a skillet over medium-high heat, heat olive oil; sear chicken for 4-5 minutes per side until cooked. Set aside.
  4. In the same skillet, reduce heat and sauté garlic in butter until fragrant.
  5. Stir in heavy cream and Velveeta until melted; then add mozzarella and Parmesan until smooth.
  6. Toss the cooked tortellini in the sauce; stir in reserved pasta water if needed for consistency.
  7. Add chicken back into the skillet; simmer together for about 12 minutes.
  8. Serve hot, garnished with fresh parsley if desired.
