  • 1 lb (450g) boneless, skinless chicken breast, diced
  • Salt and pepper to taste
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz (225g) uncooked penne or rotini pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Spinach

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken, season with salt and pepper, and cook until browned (5-7 minutes).
  3. Stir in diced onion and minced garlic; sauté until onions are translucent (3-4 minutes).
  4. Pour in chicken broth and heavy cream; stir well and bring to a simmer.
  5. Add uncooked pasta directly into the pot; stir occasionally and cook until al dente (10-12 minutes).
  6. Remove from heat, stir in shredded mozzarella and Parmesan until melted and creamy.
