  • 400g chicken breast, cubed
  • 1 tbsp olive oil
  • 1 finely chopped onion
  • 2 garlic cloves, minced
  • 2 cups diced carrots
  • 1 cup peas (fresh or frozen)
  • 1 tbsp curry powder
  • 1 tsp paprika
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1 tbsp tomato paste
  • 1 cup basmati rice
  • 3 cups water
  • Pinch of salt
  • Salt & pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a saucepan, bring 3 cups of water to a boil. Add basmati rice and a pinch of salt. Cover and simmer on low heat for about 15 minutes until fluffy.
  2. Season cubed chicken with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken until browned, then set aside.
  3. In the same skillet, melt butter and sauté onion and garlic until fragrant. Add diced carrots; cook briefly. Stir in curry powder, paprika, tomato paste, chicken stock, and heavy cream. Simmer until thickened.
  4. Return cooked chicken to the skillet along with peas; heat through.
  5. Plate the creamy mixture over fluffy rice and garnish with chopped parsley.
