  • ¾ cup unsalted butter, melted
  • 16 oz (2 blocks) full-fat cream cheese, softened
  • ½ cup granulated sugar (for the filling)
  • 2 large eggs
  • 1 tablespoon lemon zest (about 1 lemon)
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, combine graham cracker crumbs, flour, granulated sugar, and salt. Stir in melted butter until mixed.
  3. Press two-thirds of the crumb mixture into the bottom of the baking dish.
  4. Beat softened cream cheese in another bowl until smooth. Gradually add granulated sugar; mix in eggs one at a time. Stir in lemon zest, fresh lemon juice, and vanilla extract until silky.
  5. Pour the creamy filling over the crust and sprinkle remaining crumbs on top.
  6. Bake for 30–35 minutes until set but slightly jiggly in the center.
  7. Cool for an hour at room temperature before refrigerating for at least three hours.
  8. Slice into bars and serve chilled or at room temperature.
