  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 12 oz medium shell pasta
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese, divided
  • Reserved pasta water (optional, to loosen sauce)
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook shell pasta in salted boiling water until al dente; drain and reserve some cooking water.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken chunks seasoned with Cajun seasoning and spices until fully cooked and golden-brown.
  3. In the same skillet, add heavy cream, then stir in cream cheese until melted. Add Parmesan cheese and mix until smooth.
  4. Combine cooked pasta with the sauce until well-coated. Stir in half of the mozzarella until melted.
  5. Return the chicken to the skillet, sprinkle remaining mozzarella over the top, and let it melt slightly before serving.
