  • 1 tsp Vanilla extract
  • 1/2 cup Pumpkin puree
  • 2/3 cup Granulated sugar
  • 1/3 cup Brown sugar
  • 2 tsp Pumpkin pie spice
  • 1/4 tsp Kosher salt
  • 2 cups Heavy cream (cold)
  • 28 Ladyfingers
  • 2 cups Coffee (espresso or strong coffee)

Instructions

  1. Prepare espresso coffee and let it cool.
  2. In a mixing bowl, combine mascarpone cheese, sugars, salt, and pumpkin pie spice; mix until smooth.
  3. Stir in pumpkin puree until well blended.
  4. Whip heavy cream until thickened; fold into mascarpone mixture.
  5. Dip ladyfingers in coffee briefly and layer them in a baking dish.
  6. Spread half of the mascarpone mixture over the ladyfingers; repeat layering.
  7. Top with remaining filling using a piping bag for decorative dollops.
  8. Chill in the refrigerator for at least 4 hours before serving; dust with cocoa powder.
