  • 8 oz boneless skinless chicken breast or thighs
  • 8 oz pasta (penne, spaghetti, or linguine)
  • 1 cup finely chopped onion
  • 2 cloves garlic (minced)
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • Fresh spinach (to taste)
  • Grated cheese (optional)

Instructions

  1. In a large pot over medium heat, add olive oil and season the chicken pieces with salt and pepper. Cook until golden brown on all sides.
  2. Add chopped onion to the pot and sauté for about 3-4 minutes until translucent. Stir in minced garlic and cook for another minute.
  3. Pour in the pasta and enough water to cover by an inch. Bring to a boil, then reduce heat and simmer until pasta is al dente.
  4. Add the chicken broth to the pot, stirring well to combine. Simmer for an additional 5-7 minutes until most of the liquid is absorbed.
  5. Remove from heat and serve hot with optional grated cheese on top.
