  • 8 garlic cloves, minced
  • 3 cups cherry tomatoes, halved
  • 4 tablespoons olive oil
  • 1 cup apple vinegar
  • 1 teaspoon white sugar
  • 1 teaspoon chili flakes
  • 2 tablespoons tomato paste
  • 2 cups heavy cream
  • 8 oz rigatoni pasta, cooked al dente
  • ½ cup chopped parsley
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Mince garlic and halve cherry tomatoes.
  2. Heat olive oil in a large pan over medium heat; sauté garlic until golden (about 5 minutes).
  3. Add cherry tomatoes and salt; cook until soft (10-15 minutes).
  4. Stir in apple vinegar, chili flakes, and tomato paste; simmer for 5 minutes.
  5. Mix in heavy cream and thicken with a slurry made from flour and water; cook for another 5-10 minutes.
  6. Season with parsley, smoked paprika, garlic powder, salt, and pepper. Toss with cooked rigatoni.
  7. Let sit covered for 5 minutes before serving.
