Ingredients

Scale
  • 20 ounces refrigerated cheese tortellini
  • 1 pound ground beef
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and drained
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and black pepper, to taste

Instructions

  1. Cook the tortellini in salted boiling water for about 3-5 minutes; drain and set aside.
  2. In a large skillet over medium-high heat, heat olive oil. Brown the ground beef for about 7-9 minutes, then drain excess fat.
  3. Add chopped onion; cook until softened (about 4-5 minutes). Stir in minced garlic and thawed spinach; cook for an additional 2-3 minutes.
  4. In a separate saucepan, melt butter over medium heat. Whisk in flour to create a roux; cook for about one minute.
  5. Gradually whisk in milk and chicken broth until smooth; simmer for about 5-7 minutes until thickened.
  6. Lower the heat; mix in heavy cream, Parmesan cheese, salt, and pepper until creamy.
  7. Combine cooked tortellini with meat-spinach mixture into the sauce; stir gently until evenly coated.
  8. Serve hot with extra cheese or fresh herbs if desired.
