  • 1 stick butter (softened)
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 3 oz cream cheese (softened)
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth.
  3. Add in the egg and vanilla extract; mix until well combined.
  4. Gradually incorporate flour, salt, and baking powder until just combined.
  5. Using a cookie scoop, place uniform balls of dough on the prepared baking sheet and flatten each slightly.
  6. Create an indentation in the center of each cookie using a measuring cup.
  7. Bake for 8–9 minutes or until edges are lightly golden; allow to cool before transferring to a wire rack.
