  • 800 g frozen spinach (or fresh)
  • 2 tbsp olive oil
  • 8 spring onions, finely chopped
  • 2 large leeks, finely chopped
  • 1 tsp salt (or more, as needed)
  • 100 g fresh parsley, chopped
  • 100 g fresh dill, chopped
  • 2 large eggs
  • 400 g feta cheese, crumbled
  • 1 lemon (zest only)
  • 1 pack phyllo pastry
  • 113 g butter (melted)
  • 60 ml olive oil
  • 2 tbsp sesame seeds (optional)

Instructions

  1. Preheat your oven to 180C (350F). Place a tray on the middle shelf.
  2. Thaw and drain the spinach thoroughly.
  3. In a frying pan, sauté spring onions and leeks in olive oil until softened.
  4. Stir in parsley, dill, and spinach; cook briefly then let cool.
  5. Mix in feta cheese, eggs, and lemon zest; adjust seasoning.
  6. Layer phyllo sheets brushed with butter/oil in a pie dish.
  7. Add filling over the layered phyllo and fold edges over.
  8. Score the top of the pie for easier slicing.
  9. Bake for about 45 minutes or until golden brown.
