  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans diced tomatoes with green chilies (with juices)
  • 1/2 cup chicken broth
  • Salt & pepper (to taste)
  • Optional toppings: shredded cheddar, cilantro, sour cream, corn chips/strips, scallions or red onions, avocado

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sauté chopped onion until translucent (about 5 minutes).
  2. Add ground turkey and cook until browned, breaking it up into smaller pieces (about 5 minutes).
  3. Stir in tomato paste, chili powder, garlic powder, ground cumin, smoked paprika, and cayenne pepper until well combined.
  4. Add drained kidney beans, diced tomatoes (with juices), and chicken broth. Bring to a gentle boil.
  5. Reduce heat to simmer for 15–20 minutes with the lid slightly open, stirring occasionally.
  6. Season with salt and pepper to taste before serving hot with desired toppings.
