  • 1/4 cup salted butter, softened
  • 1 tsp vanilla extract
  • 1/8 tsp ground cinnamon
  • Pinch sea salt
  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
  3. In another bowl, beat the eggs and sugar until light and fluffy. Add the pumpkin puree and vanilla extract; mix well.
  4. Gradually fold in the dry ingredients until just combined.
  5. Spread the batter evenly on the prepared baking sheet. Bake for about 15 minutes or until a toothpick comes out clean.
  6. Dust a clean kitchen towel with powdered sugar. Once baked, flip the cake onto the towel and roll it up tightly while still warm. Let it cool completely.
  7. For the frosting, beat together cream cheese, softened butter, vanilla extract, cinnamon, sea salt, and powdered sugar until smooth.
