  • 500g chicken breast, cubed
  • 200g mushrooms, sliced
  • 1 red bell pepper, sliced
  • 300g fresh asparagus
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 1 tbsp sesame oil or vegetable oil
  • Salt & black pepper to taste
  • Chopped green onions for garnish
  • 200g jasmine or long-grain rice
  • 400ml water
  • Pinch of salt
  • 1 tbsp olive oil

Instructions

  1. Cook the rice according to package instructions until fluffy.
  2. Sauté asparagus in olive oil over medium heat until tender-crisp. Set aside.
  3. In a wok, heat sesame oil and sauté garlic until fragrant. Add chicken and cook until golden brown.
  4. Incorporate mushrooms and red bell pepper; cook until softened.
  5. Mix sauces and cornstarch slurry; pour into the pan and cook until thickened.
  6. Serve stir-fry hot over rice with roasted asparagus on the side.
