  • 2 large boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tsp Cajun seasoning
  • Salt and black pepper, to taste
  • 4 tbsp unsalted butter, divided
  • 1/2 cup grated Parmesan, for sauce
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp crushed red pepper flakes, optional
  • Chopped parsley or herbs, for garnish

Instructions

  1. Cook rotini in salted boiling water until al dente (about 10 minutes). Drain and set aside.
  2. Season chicken strips with Cajun seasoning, salt, pepper, and coat with Parmesan.
  3. In a skillet, heat olive oil and butter over medium-high heat; sear chicken until cooked through (5-7 minutes). Remove from skillet.
  4. In the same skillet, sauté remaining garlic for 30 seconds; add heavy cream and chicken broth, bringing it to a simmer.
  5. Stir in cream cheese and cheeses until melted. Season sauce with spices; simmer for another few minutes.
  6. Toss cooked rotini into the sauce until well coated. Serve topped with seared chicken and garnish as desired.
