  • 3/4 cup unsalted butter, softened to room temperature
  • 3/4 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses, (not blackstrap)
  • 1/3 cup turbinado or granulated sugar
  • 6 tablespoons unsalted butter, softened to room temperature
  • 23 cups icing sugar, sifted
  • 34 tablespoons eggnog
  • 1/4 teaspoon vanilla extract (alcohol-free), optional

Instructions

  1. Prepare dry ingredients: Whisk together flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
  2. Make cookie dough: Beat butter and brown sugar until smooth; add eggs, vanilla, and molasses. Slowly mix in the dry ingredients.
  3. Chill dough: Cover and refrigerate for 30 minutes or up to 24 hours.
  4. Bake: Preheat oven to 350°F (175°C). Form dough into balls, roll in sugar, place on lined sheets, and bake for 8–10 minutes. Cool on wire rack.
  5. Prepare frosting: Beat softened butter; gradually add icing sugar and eggnog until desired consistency is achieved.
  6. Assemble cookies: Frost one cookie and sandwich with another.
