  • 1/2 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 1/2 cup unsalted butter (softened)
  • 4 ounces cream cheese (brick style, full fat)
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon whipping cream (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, mix together all-purpose flour, ginger powder, cinnamon, and other dry ingredients.
  3. In another bowl, cream together softened butter and sugars using an electric mixer, then add molasses and vanilla extract followed by an egg.
  4. Gradually combine the dry ingredients with the wet mixture and fold in rolled oats.
  5. Drop rounded tablespoons of dough onto prepared baking sheets and bake for about 9 minutes until edges are golden. Cool on racks.
  6. For the filling, beat softened butter and cream cheese together before gradually adding powdered sugar and vanilla extract.
  7. Once cookies have cooled, spread or pipe the frosting between two cookies to create sandwiches.
