  • ¼ tsp salt
  • ½ cup brown sugar
  • ½ cup sour cream (or yogurt)
  • ½ cup whole milk
  • 1 large egg
  • Coarse sugar (for sprinkling)
  • ½ cup powdered sugar
  • 12 tbsp fresh squeezed lemon juice (to taste)
  • 12 tbsp milk, to taste
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 425°F and prepare a muffin tray with cooking spray.
  2. In a microwave-safe bowl, melt butter with molasses for about one minute; let cool slightly.
  3. In another bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, nutmeg, and salt.
  4. Combine brown sugar, sour cream (or yogurt), milk, and egg into the molasses mixture until well blended.
  5. Gradually fold the wet ingredients into the dry mixture until just combined; avoid overmixing.
  6. Fill muffin cups to the top and sprinkle with coarse sugar if desired.
  7. Bake at 425°F for 5 minutes, then reduce temperature to 350°F and bake for an additional 11–14 minutes until done.
  8. Let cool before drizzling with lemon glaze made from powdered sugar and lemon juice.
