  • 200g halloumi cheese
  • 2 tbsp extra-virgin olive oil
  • Juice of 1 lemon
  • 1 cup cooked rice or quinoa
  • 1 medium cucumber
  • 8 cherry tomatoes
  • 10 kalamata olives
  • 2 tbsp crumbled feta cheese (optional)
  • Homemade tzatziki (Greek yogurt, grated cucumber, garlic, lemon juice, salt, dill)

Instructions

  1. Whisk together olive oil, lemon juice, and oregano in a bowl.
  2. Slice halloumi into half-inch pieces and marinate in half the dressing.
  3. Prepare veggies: slice cucumber and halve tomatoes.
  4. For tzatziki: mix grated cucumber, garlic, yogurt, lemon juice, salt, and dill.
  5. Heat olive oil in a skillet over medium heat; cook marinated halloumi until golden brown.
  6. Assemble bowls with rice or quinoa at the base followed by veggies, olives, feta (if using), and halloumi.
  7. Drizzle remaining dressing over the top and serve with tzatziki.
