  • 1 tsp. kosher salt
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 1 jar (15 oz.) green enchilada sauce
  • 1 can (4 oz.) diced green chiles (mild)
  • 1 tsp. dried oregano
  • 1 tsp. cumin
  • 1 tsp. chipotle chili pepper powder
  • 4 oz. full-fat cream cheese, softened and cut into cubes
  • 1 rotisserie chicken, shredded
  • 1 can (15 oz.) yellow corn, drained
  • 1 can (15 oz.) pinto beans, drained and rinsed
  • Fried tortilla strips (optional)
  • Avocado (optional)
  • Fresh cilantro (optional)
  • Grated cheese (optional)
  • Sour cream (optional)
  • Sliced scallions (optional)

Instructions

  1. Heat olive oil in a large soup pot over medium heat until shimmering.
  2. Sauté diced onion and jalapeno with salt until softened (about 5 minutes).
  3. Stir in minced garlic and cook for another minute.
  4. Pour in chicken broth, green enchilada sauce, diced green chiles, oregano, cumin, and chipotle chili powder; bring to a boil then reduce to simmer.
  5. Add softened cream cheese cubes; stir until melted and combined.
