  • 1 cup arugula or mixed greens
  • 1 avocado, sliced
  • 56 cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1 cup crumbled feta cheese
  • A few beet or red onion strips (optional)
  • 1 cup garlic croutons
  • 1 tbsp olive oil (optional)
  • 1 tsp lemon juice or balsamic vinegar (optional)

Instructions

  1. Rub the chicken breast with olive oil, garlic powder, Italian seasoning (or paprika), salt, and pepper. Grill or pan-sear it for about 6-8 minutes per side until it’s golden brown and fully cooked. Let it rest before slicing.
