2 boneless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
Salt & pepper
1 cup brown rice
2 cups water
Pinch of salt
2 carrots, sliced into coins
1 tsp olive oil
1 tsp dried thyme or oregano
3 tbsp mayonnaise
1 tbsp Greek yogurt
1 tsp fresh lemon juice
1 tsp red chili flakes
Black pepper
Fresh parsley, chopped
Instructions
Cook brown rice according to package instructions in salted water until fluffy.
Rub chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper. Grill over medium heat for 5-7 minutes per side until cooked through; slice thinly.
In a skillet, sauté sliced carrots with olive oil, thyme (or oregano), salt, and pepper until tender-crisp (about 5 minutes).
In a mixing bowl, combine mayonnaise, Greek yogurt, lemon juice, red chili flakes, and black pepper to create the creamy sauce.
