  • 1 chicken breast, cut into chunks
  • 1 cup sweet potatoes, peeled and cubed
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • Optional: chili flakes, lemon juice for serving

Instructions

  1. Preheat your oven to 400°F (200°C). In a mixing bowl, toss sweet potato cubes with half of the olive oil, smoked paprika, salt, and pepper. Spread the seasoned cubes on a baking tray and roast for 20-25 minutes until golden and tender.
  2. While the sweet potatoes roast, season the chicken with garlic powder, onion powder, salt, and pepper. Heat a grill pan or skillet over medium heat with some oil. Grill the chicken chunks for about 6-8 minutes until cooked through and nicely charred.
  3. In another pan, heat the remaining olive oil over medium heat. Add broccoli florets and sauté for about 5-6 minutes until bright green and slightly tender. Season with salt, pepper, and optional chili flakes.
  4. Assemble your plate by arranging the grilled chicken alongside roasted sweet potatoes and sautéed broccoli. Drizzle with lemon juice if desired.
