  • 45 baby potatoes, halved
  • a handful of cherry tomatoes
  • 1 cup baby spinach
  • 1 lemon wedge
  • 1 tsp olive oil
  • Salt, black pepper, garlic powder to taste

Instructions

  1. Cook the Vegetables: Boil or steam the carrots and baby potatoes until fork-tender (8-10 minutes). Toss with a pinch of salt and set aside.
