  • 12 tostada shells
  • lb raw peeled shrimp
  • 2 avocados
  • 34 tomatoes
  • 1 jalapeño pepper
  • juice from 1 lime
  • 1/2 small bunch cilantro
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. In a bowl, mix chili powder, cumin, oregano, garlic powder, onion powder, salt, black pepper, and olive oil. Add shrimp and marinate for at least 30 minutes.
  2. For the guacamole, mash avocados and combine with minced cilantro, garlic, lime juice, salt, and pepper.
  3. To make pico de gallo, combine diced tomatoes, minced garlic, jalapeño pepper, red onion, and cilantro in a bowl.
  4. Preheat grill pan over medium heat; lightly spray with cooking spray. Cook the marinated shrimp for about 1-2 minutes on each side until opaque.
  5. Assemble tostadas by layering guacamole on each shell followed by grilled shrimp and pico de gallo.
