  • 1 pound lean ground beef
  • 1 small onion
  • 2 garlic cloves
  • 28-ounce can diced tomatoes
  • 2 cups shredded mozzarella cheese
  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Prepare the zucchini by slicing it into rounds and salting them to draw out moisture; rinse and pat dry.
  2. In a skillet, heat olive oil over medium-high heat. Sauté diced onions until softened, then add minced garlic and ground beef. Cook until browned.
  3. Stir in drained diced tomatoes and seasonings; remove from heat.
  4. Preheat the oven to 350°F (175°C). In an 8×8 baking dish, layer half of the beef mixture, followed by half of the zucchini and half of the cheese. Repeat layers.
