  • 1/4 tsp cream of tartar
  • 1/2 cup white sugar
  • 1 stick unsalted butter (softened)
  • 2 cups confectioner's sugar
  • 2 tbsp milk
  • Purple gel food coloring
  • Black decorating frosting

Instructions

  1. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat room temperature egg whites with cream of tartar until foamy. Gradually add sugar while mixing on high until stiff peaks form.
  3. Pipe mounds of meringue onto the baking sheet and bake for 2 hours. Turn off the oven and let them cool inside for an additional 30 minutes.
  4. For the buttercream, mix softened butter, confectioner's sugar, milk, and purple gel food coloring until smooth.
  5. Frost cooled cupcakes with buttercream, top with meringue ghosts, and decorate with black frosting for eyes.
