  • 12 Lotus biscoff biscuits
  • 150 g dark chocolate (melted)
  • 30 g white chocolate (melted)
  • 175 g baking spread or unsalted butter (softened)
  • 175 g caster sugar
  • 3 large eggs
  • 2 tbsp milk
  • 150 g self-raising flour
  • 25 g cocoa powder
  • 1/4 tsp baking powder
  • 115 g full-fat cream cheese
  • 15 g icing sugar
  • 15 g Oreos (crushed)
  • 1/8 tsp vanilla extract
  • 100 g unsalted butter (for chocolate buttercream)
  • 165 g icing sugar (for chocolate buttercream)
  • 35 g cocoa powder (for chocolate buttercream)
  • 12 tsp milk (for chocolate buttercream)
  • 25 g unsalted butter (for green grass buttercream)
  • 50 g icing sugar (for green grass buttercream)
  • 1/8 tsp vanilla extract (for green grass buttercream)
  • Green food colouring
  • 35 g Oreos (crushed)

Instructions

  1. Start by making the biscuit graves: Snap about a third off each biscuit, melt the dark chocolate, dip each biscuit in it, and set on baking paper.
  2. Once the dark chocolate has set, melt the white chocolate and pipe designs onto the biscuits.
  3. Preheat your oven to 140C Fan/160C/325F/Gas Mark 3 and line a cupcake tin with cases.
  4. In a mixing bowl, combine the baking spread and caster sugar, whisk until light and fluffy. Add in eggs and milk, mixing until well combined. Fold in self-raising flour, cocoa powder, and baking powder.
  5. Divide the mixture into the lined cupcake cases and bake for 25-30 minutes, or until a skewer comes out clean. Allow to cool on a wire rack.
  6. Prepare the Oreo cheesecake filling by mixing cream cheese, icing sugar, and vanilla until smooth, then stir in crushed Oreos.
  7. Core the cooled cupcakes and fill the holes with the Oreo cheesecake filling.
  8. For the chocolate buttercream, mix softened butter, cocoa powder, and icing sugar until combined, adding milk gradually until smooth.
  9. For the green grass buttercream, mix softened butter, icing sugar, vanilla extract, and green food coloring until the desired shade.
  10. Pipe chocolate buttercream onto each cupcake, inserting the biscuit gravestones and sprinkling crushed Oreos around.
  11. Use green grass buttercream in a piping bag to add grass around each gravestone.
