  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 cup chopped pecans (optional)
  • 1 cup sweetened shredded coconut (optional)
  • 1 package (8 oz) cream cheese, softened
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 23 tbsp pineapple juice (reserved from the can)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, baking soda, and salt.
  3. Stir in the eggs, vanilla extract, and crushed pineapple along with its juice until well blended; the batter will be thick.
  4. Fold in chopped pecans and shredded coconut if using.
  5. Divide the batter evenly between prepared pans. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Let cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  7. Beat softened cream cheese and butter together until creamy and smooth.
  8. Gradually add powdered sugar while beating until fluffy.
  9. Mix in vanilla extract and reserved pineapple juice until smooth and spreadable.
  10. Place one cake layer on a serving plate. Spread a generous layer of frosting over the top.
  11. Add optional pineapple tidbits and chopped pecans for extra texture if desired.
  12. Place the second cake layer on top and frost the entire cake evenly.
  13. Sprinkle with additional chopped pecans and shredded coconut for garnish.
